Carrots contain more Carotene (Alpha & Beta) than any other fruit or vegetable. Beta Carotene is the helps the body produce vitamin A, which is important in strengthening the immune system and promoting healthy cell growth. Vitamin A is a potent antioxidant. It fights free radicals that are associated with causing membrane damage, DNA mutation and lipid (fat) oxidation which can lead to a variety of degenerative diseases. Studies have shown that Alpha Carotene may be as powerful as Beta Carotene in significantly inhibiting the processes that may lead to tumor growth.
