quick, easy, healthy and satisying!

I love this cookbook...love it love it! All of the recipes that I have tried thus far have been fantastic. Most of the recipes are also low in sodium for those that are watching their salt-intake. Depending on the recipe I'll add a lil more salt or whatever seasonings I want. For example the Baked Catfish (which is ridicously delish) I added some old bay and more cayenne (like it spicy). It had all that fried fish taste with 5 grams of fat and about 225 calories! I served the catfish with mashed sweet potatoes (in the book) and peas...salad for my boyfriend. And these are MEALS! You get an entree, side dish(or veggie recommendation), and dessert. You get the nutritional breakdown of each item per serving, and how much a serving consists of. And they are real people servings, not one cookie-type servings! I'm a foodie, and these meals keep my taste buds and tummy satisfied--high protein, moderate carbs, low fat. There is enough color, texture and taste in each meal. Items are easy for me to find. I've used this cookbook sooo many times, and recommend it to my friends who love food, but aren't loving it in a healthy way. I feel 'eat what you want, but make it as healthy as you can', and with this book it's easy to do. Well, stick to portions too! If you are overweight or lack energy or just have bad eating habits get this book! If you are a busy person or if you love to cook, get this book! Use these recipes for lunch and dinner and by the end of the week you'll definitely see/feel a difference. If I come home starving I grab this book and dinner is done quite quickly. Try the deep dish pizza casserole...the ingredients were so plain I thought whatever I'll give it a try. It shocked me how good it was! I made it 2 weeks in a row because my boyfriend enjoyed it so much. I used a tomato-basil marinara sauce, and of course added a pinch of sugar and seasonings. Be creative.I can go on and on. Just get this book. Get this book! I don't care who you are, if you like to eat...GET THIS BOOK

Great, quick, easy

This cookbook is great. I agree that these recipes probably aren't for the gourmet cook, but they are definitely for the busy person who wants to make and eat healthy at home. Some of our favorites are the athenian fish (we use frozen tilapia filets), sausage and black bean soup, and beef stroganoff.


great cookbook!

I've had a copy of this book for quite a few years. i bought this particular copy as a wedding present to a couple just starting out, with basic cooking experience. it's great for quick meals, it tells the shopping lists, everything you need. it's a great book for first time cookers as well as experienced, busy people. nice pix through out the book help in picking what you want to try first!

Best Light Cookbook!

I have had this cookbook for a couple of years now and tried about half of the recipes. They have all been very tasty. My husband and I love to cook from this book after we come home from work because it's fast and allows us to eat healthy. I definatley use this cookbook more than any others I own!


Good for weekday cooking

I'm surprised at the complaints about the recipes using pre-processed/packaged foods. That's what a 15 minute cookbook is about, and you can always substitute. I use this one quite a bit for cooking during the busy week. Weekends are for the more complicated recipes. Like any cookbook, this has some recipes more bland than I like, but overall I'm quite happy with it.
