Taking the guesswork out of the smoking process
Smoking meat is not a trivial process, as I learned when I bought my first smoker. My first attempt was a disaster, producing a burned, woody, unpleasant product. In fact, it was so bad, I had thoughts of never firing up my smoker again. But, after my wife bought this book for me, and I read the "basics" chapters, I immediately realized the several mistakes I made. While my second attempt wasn't nearly as bad as the first, it wasn't what I was hoping for. By reading and following Richard's instructions, tips and following his basic recipes, the third attempt at producing brisket turned out wonderful. What I like about this book is that it's written for both the beginning novice as well as the advanced smoker, with great, easy to follow recipes for rubs, mops, and sauces. And, it's not just dedicated to smoking brisket and ribs, but all sorts of other meats including seafood and poultry. If you struggle to produce a well-smoked product or are interested in improving your technique, I highly recommend this book! No other book has been as helpful as this one for me.

Another good book for backyard bbq....
This is another great book for those who want to take the step into real, smoked
bbq
at home. This book leads the way on taking the step from regular grilling to slow-smoked bbq. It also is just plain good reading for those who like cooking and grilling with smoke, as well as those into spending all day in the
backyard
making real bbq and driving the neighbors crazy with the aromas.
A Great Book For Smoking
I disagree with the earlier review by Christopher M. Raiti. I was a beginner when I first used this book and it has plenty of tips for beginners. Overall a great book with plenty of info on how to select charcoal, wood, and meats. Well worth the money. Another great book is Paul Kirk's Championship Barbecue Sauces. It has great tips and recipes for rubs and sauces

Easy to understand, great recipes
This is a BASIC book to introduce you into smoking meets. I smoked for the first time over the weekend, and thought why not try pulled pork, I smoked it exactly as the book called for and it was fantastic. I also made the "take my breath away"
BBQ
sauce which was to die for. He has some spelling mistakes, but his easy to understand/great tasting recipes more than make up for it. No pictures in the book, but you can easily accomplish your goal with out the visual aids
Good Info that Needs an Editor
This book has a lot of good information in it, but the editor should be shot. It's filled with a plethora of really annoying basic grammar mistakes. For st
art
ers, there is a difference between "to" and "too."
Aside from the grammar complaints, I really liked this book and use it as a jumping off point for my own recipes.
